Doraku – Carrying Forward Shuji Manabe's Legacy
“Doraku” means “hobby” or “something one enjoys.” This name reflects the love and passion that our founder, Shuji Manabe, had for Japanese cuisine. With a career in the restaurant business beginning in 1985, Shuji settled in Halifax in 1992, where he established Daruma Sushi, Momoya Restaurant, Doraku (on Dresden Row), and Ko-Doraku, sharing the beauty of Japanese cuisine with countless people.
For Shuji, “Doraku” was not just work; it was his hobby—a space to pursue his passion wholeheartedly. He devoted himself to presenting authentic Japanese flavors and aesthetics, earning the affection of many. Sadly, Shuji passed away in 2022, leaving behind a legacy of culinary excellence and joy.
At Doraku, we honor Shuji Manabe’s vision by embracing the joy of creating dishes and the pleasure of hospitality. We hope that this joy is felt by our guests, allowing them to experience moments of pure bliss while dining with us. Every day, we strive to make this vision a reality.
